Andaman biryani is not your typical biryani. Unlike the more common ghee-heavy varieties of North India, it’s lighter and delicately spiced, perfectly suited to the humid climate of the islands. The dish reflects the fusion of several regional influences: the mustard tang of Bengali cuisine, the heat of Tamil spices, the rich marinades of North Indian biryani, and even hints of Southeast Asian flavors.
The event was graced by Dr. Anil Agarwal, IAS, Secretary (Health)/MD (NAM), who attended as the Chief Guest, while Dr. Suja Antony, Director of Health Services, and Padma Shri awardee Naresh Chander Lal were present as Guests of Honour. Aqueducts, designed to transport water across valleys and gaps, have historically played a crucial role in alleviating water shortages, especially in drought-stricken regions. The Panighat Aqueduct, constructed with red bricks and lime mortar, was essential to the area's water supply system. Built by the British, it efficiently channeled water from the foothills of the then Mount Manipur to the Panighat Jetty using a gravity-fed system, requiring no external power.
